The postponement of the Jamaica Pegasus's Wine, Spirits & Food Festival due to Tropical Storm Tomas only meant that purveyors had a longer time to perfect their exhibitions.

Packaged meat purveyors Caribbean Passions presented a flat-crust pizza topped with chicken ham.

Herb-roasted chicken with a white wine sauce.

Using sugar syrup, Blue Curacao, lime juice and Wray & Nephew white overproof rum, Wray & Nephew presented Sex in the Sun.

The event, held inside the hotel's Grand Jamaican Suite, was staged between Sunday, November 14 and Monday, November 15 and featured a variety of booths offering wines, savoury and sweet treats alike.

"This year's staging has been great," says Jamaica Pegasus Hotel Manager Nancy McLean, "as much as we had to postpone, the turnout has been astounding."

"The Epicurean luncheon was excellent on both days and I'm especially proud of my chefs," she adds, noting that this year she decided to go with an all-local crew instead of an international presenter.

"Relying on local talent is something we're pushing here at the Jamaica Pegasus. We did that for our Jazz in the Gardens and now we're applying the same formula to our food and beverage department," McLean says.
